APPLETON MUSEUM OF ART

There are many different types of museums located throughout Central Florida, but one of the most beautiful is the Appleton Museum of Art located in eastern Ocala.

It was erected on a 44 acre wooded tract of land and was opened to the public in 1987. The museum houses the collection of Arthur Appleton, who over the past 60 years, has managed to collect over 6,000 art objects. Also featured is a large lecture hall and beautiful outdoor garden area used for dining and dancing events. Central Florida Community College owns and operates the museum, also holding art classes for their students.

The Flavors of the Caribbean
by Chef Rotz

While visiting the islands of St. Thomas, St. John and Virgin Gorda this summer, I had the opportunity to sample some of the greatest foods every created, “Caribbean Cuisine”. Caribbean cuisine is highly seasoned food, blending wonderful herbs enhanced by ginger, cloves, allspice or nutmeg, each providing its own unique flavor and aroma.

One dish you will find on every island is “Callaloo”, also known as “Pepperpot”, which could either be a thick soup or a mixed vegetable stew. Callaloo originated by settlers pooling their entire foodstuff and making a one-pot meal from which everyone ate. Today, there are many different variations of the dish, depending on the ethnic background of the chef or cook. Traditionally, Callaloo is served with a scoop of Fungi (pronounced fun-gee), which is a combination of cornmeal and okra with a bit of liquid to make a dumpling-like consistency.

HIGH HOPES OF HIGHLAND LAKES

A few of the Highland Lakes residents decided they would like to assist children and families that were afflicted by life threatening situations or illness. From that desire, High Hopes of Highland Lakes, Inc. was formed and the group has been instrumental in carrying out the goal of helping others.

For example, a cerebral palsy young boy was in need of a walk-about for mobility, and another young boy needed a handicap ramp for his wheelchair, as well as toys to develop his dexterity and coordination. Thanks to the fun-raising activities of High Hopes, these items were provided. They also deliver food baskets at Thanksgiving and Easter and gifts at Christmas to children and families that are less fortunate. With the help of other volunteers, High Hopes delivered 125 quilts to the Lake County Sheriff’s Office that will be used by children in crises, such as home fires, auto accidents, etc.

PANCAKE BREAKFASTS

It has been said that the best way to start your day is with a good breakfast...and is even better with friends and neighbors.

In most of the Pringle communities, a “special group of volunteers” serve a terrific Pancake breakfast each month, at a very reasonable charge, as a way to raise money for their community. These monthly events have become a great way to “get your engine going” and socialize with your neighbors. In some of the communities, the profits each month are distributed to a different club sponsoring the breakfast for their club activities; while others accumulate money for projects benefiting the whole community.

EASY – TO – GROW GARDEN FLOWERS

Flowers come in all colors, but it seems there are not as many blue flowers as there are reds, oranges or yellows. In the last few years, however, one blue-flowered plant has become quite common and easy to grow in Central Florida.

Plumbago (also called "leadwort" or "sky flower") is an evergreen shrub with semi-woody stems that form a loose, rounded mound 3-10 feet high with a similar spread. It is native to South Africa, and has become a popular ornamental in subtropical gardens both in Florida and in California. It does best in light, sandy soils with good drainage. It enjoys full sun and survives with little watering once established. In addition, it can stand some frost, and if it is killed to the ground, it recovers easily.
